1. The Tools:
The tools you will need to shuck oysters are amazingly simple. You will just need an oyster knife and a dishtowel.
2. The Technique:
The first step to shuck oyster shells is to find the “lip” of the oyster. This is the flat, rounded end of the oyster. Place the oyster lip-side up in your hand, and fold the dish towel over your fingers for grip and protection.
Next, insert the oyster knife into the space between the top and bottom shells at the hinge. You may need to wiggle the knife a bit to loosen the oyster. Once the knife is inserted, twist it slightly and then pull up on the top shell. The goal is to pop the top shell off, without losing any of the delicious oyster liquor (the natural juices inside the oyster).
If the oyster is stubborn, you can try running the knife around the inside edge of the top shell to loosen it. Once you’ve pried the top shell off, you can use the knife to cut the oyster free from the bottom shell. Be careful not to cut into the meat of the oyster.
You can then either slurp the oyster straight from the shell, or use a fork to remove it.
